Why allow Death Knights to wear all types of armour when everyone says Plate is the best?
Why not just allow Death Knights to only wear Plate? I suppose the same question could be posed to Paladins, as well...

I think its cool that the game allows us to wear all types of armor below ours. Then you can play around with funny clothing items if you are into roleplaying or goofing around.

While plate is very good, it's not always the best in every case. A holy pally for example, might benefit more from the wider variety of cloth-type spell gear rather than plate. Similarly, on my death knight, I equipped a pair of Trollwoven Spaulders (http://www.wowhead.com/?item=43481) because I needed a boost to my expertise. Works pretty well, and they are leather.
Another reason (this one not applying to death knights) is that you don't get plate right off the bat, you start out in mail instead. As you character gets "stronger" he or she is then able to don some really heavy armor.

Well, some items have stats you need which are better than the stats on your already equipped plate item. However, that item could also be leather or cloth. Most likely leather. However, even if this was the case, I personally wouldn't get anything lower than plate. It always has less armor, and if I want to tank, it won't get me anywhere.
As for the "Why did Blizzard have us wear all types of armor?" question. There really is no reason. They did it, because they did it. If you think about it, it is not that big a deal anyways. They only did it because they felt like it.

Well if you are going to tank with anything but a druid or perhaps a shammy, plate is mandatory. However, if you are just out to DPS, you can get away with having less armor in favor of other stats.
One other thing, it does makes sense that if you can wear a higher level of armor that you can likewise wear lower level. I mean, unless your character is some sort of idiot, I think he or she can figure out how to put on some clothing, or if they already know how to use plate, why would they not be able to figure out how to use mail?
