How do I do that, or is it not possible?

my pet gets a new name everytime he dies. Don't think its possible to change it.

I think that the "somewhere" you found that info was confused: unholy pets HAVE a name, while other simply are "risen ghouls"... I'm sure that's were your source got mistaken; no renaming for unholy (nor warlock demons, btw) is possible: only hunters can.
